Goat Cheese and Spinach Frittata


Ingredients:
1 tablespoon olive oil
1 small red pepper diced
1 small box baby spinach 5oz or 140g clamshell box
6 large eggs
1/4 cup milk unsweetened, dairy or nondairy, your choice
And many more.

Instructions:
  • First step, Heat olive oil in a oven-safe skillet (like cast-iron) over medium heat. Add red pepper and saute 2-3 minutes. Add green onions and spinach. Saute until spinach wilts. Remove vegetables from pan and set aside.
  • After that, In a medium bowl lightly beat together eggs, milk, salt, pepper and seasoning.
  • Next step is, Pre-heat broiler.
