Peach Jam with Powdered Pectin


Ingredients:
3 3/4 c. crushed peaches
1/4 c. lemon juice
1 pkg. powdered pectin*
5 c. sugar

Instructions:
  • Step 1. Measure crushed peaches into a large sauce pan. Add lemon juice and pectin, stirring well. Stirring constantly, place on high heat and bring quickly to a full boil with bubbles over the entire surface.
  • Step 2, Add sugar, continue stirring, and heat again to a full bubbling boil. Boil hard for 1 minute, stirring constantly. Remove from heat; skim.
  • After that, Immediately pour jam into hot, sterile jars, leaving 1/4 inch headspace. Easily measure the headspace with this inexpensive canning funnel.
