Peach Jalapeno Jam


Ingredients:
3 1/2 pounds peaches, peeled and pitted (about 5 cups pureed)
2-4 jalapenos, do not remove seeds
1/4 cup lemon juice
1 (2 ounce) package powdered pectin
6 cups sugar

Instructions:
  • Step 1. Sterilize pint jars and lids in boiling water for 10 minutes.
  • Step 02, Peel and pit peaches. Remove stems from jalapenos and roughly chop. Add peaches and jalapenos to a blender and blend until smooth. (If you like chunkier jam, don't blend it as long.) You may have to do this in a couple of batches if your blender isn't large enough for all the fruit.
  • Step three, Pour peach and jalapeno puree into a large thick bottomed pot. Add lemon juice and pectin. Stir until combined.
