Ingredients:
8 cups diced apricots
1/4 cup lemon juice
6 cups sugar

Instructions:
  • Step one. Bring a boiling-water canner, 3/4 full with water, to simmer. Wash jars {I’m used pint jars} and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • And now, Combine all 3 ingredients in a large pot. Bring to a boil over medium high heat, stirring occasionally as sugar dissolves.
  • Step 3, Allow mixture to come to a full rolling boil. Gently boil for 30 minutes, stirring frequently.
