Spinach Artichoke Wontons


Ingredients:
2 garlic cloves minced
1 8 oz can artichoke hearts without oil (230g) drained & finely chopped
3/4 cup non-dairy cream cheese (6oz/ 170g ) or Cashew-Ricotta
1/4 cup non-dairy sour cream or mayonnaise (80g) optional, or white beans (cooked & mashed)
1/2 cup grated non-dairy Parmesan cheese (50g) or sub other cheese or nutritional yeast flakes
etc.

Instructions:
  • First of all. Mix the flour and salt in a bowl. Add the water while stirring to combine. Transfer to a working surface and knead for about 3-5 minutes until you have a smooth and soft dough. Form into a ball, wrap in cling film and refrigerate for 30 minutes.
  • And then, Divide the dough into two pieces (This makes it easier to roll out). Dust the working surface with a little cornstarch and roll out the dough into about 2mm (1/14-inch) thick.
  • Step 3, Cut out squares using a pizza cutter (mine were 4,7-inch (12cm) in diameter).
